Honey

Honey balances the tanginess of the balsamic vinegar while creating a glossy glaze that coats every bite of beef. I've never tested this recipe with maple syrup or agave. I think they would work nicely for flavor but don't have the same glossy components as honey.

Brown Sugar

Chicken Bouillon Base

  • 2½ pounds boneless beef chuck roast

Honey Balsamic Sauce

  • ½ cup balsamic vinegar

  • 1 tablespoon liquid smoke

  • ⅓ cup liquid aminos

  • 1 cup ketchup

  • 1 tablespoon Dijon mustard

  • ½ cup honey

  • ½ cup brown sugar

  • 3 tablespoons minced onion

  • 1 tablespoon chicken bouillon base

  • 1 teaspoon garlic powder

  • 1 teaspoon parsley

  • 1 teaspoon basil

  • 1 teaspoon paprika

  • Pinch of salt & black pepper

Instructions

  1. Heat a cast-iron skillet over medium-high heat and add a small amount of oil. If you don't have cast iron, an enameled or ceramic pan works just as well.

  2. Sear the chuck roast for about 1 to 1 1/2 minutes per side. You're not trying to cook it through, you simply want to develop a beautiful crust.

  3. Remove the roast from the pan and let it rest while you prepare the sauce.

  4. In a medium bowl, combine all of the honey balsamic sauce ingredients. Whisk until everything is well combined.

  5. Place the seared chuck roast into the bottom of your slow cooker.

  6. Pour the prepared honey balsamic sauce evenly over the roast.

  7. Cover and cook on Low for 7 hours.

  8. After 7 hours, check the beef. If it shreds easily with two forks, it's ready. If it isn't shredding yet, continue cooking until it is fork-tender.

  9. Remove the beef from the slow cooker.

  10. If you're using a multicooker with a sauté setting, leave the cooking liquid in the pot and simmer it for about 30 minutes.

  11. If you're using a traditional slow cooker, carefully transfer the cooking liquid to a saucepan and simmer it on the stovetop for about 30 minutes, or until it thickens into a rich, glossy glaze.

  12. Slice or shred the beef, spoon the thickened honey balsamic glaze generously over the top, and serve.

Taking just a few minutes to sear the roast before slow cooking is absolutely worth it. That beautifully browned crust adds another layer of flavor that you simply won't get by placing the roast directly into the slow cooker.

Let the Sauce Reduce

After the beef finishes cooking, don't skip reducing the cooking liquid. Simmering it for about 30 minutes transforms it into a thick, glossy glaze that's packed with concentrated honey balsamic flavor.

Cook Until It Shreds

Every chuck roast is a little different depending on its size, thickness, and marbling. If your roast isn't shredding easily after 7 hours, simply keep cooking it a little longer. When it's ready, it should pull apart effortlessly with two forks.
