Crock Pot Honey Garlic Chicken & Veggies

Tender honey garlic chicken, buttery red potatoes, and fresh green beans all cook together in one crock pot for an easy, complete meal. This recipe is naturally gluten-free when made with liquid aminos and is perfect for busy weeknights because everything cooks together with very little hands-on work. The sweet and savory honey garlic sauce coats the chicken while the potatoes soak up all of the delicious flavor, making this an easy family dinner you'll want to make again and again.

Ingredient Breakdown

Chicken

Boneless, skinless chicken breasts become incredibly tender in the slow cooker. Boneless chicken thighs also work wonderfully if you prefer darker meat and can be cooked the same. Just be sure to check to make sure your chicken is fully cooked before you dive in!!

Red Potatoes

Red potatoes hold their shape beautifully while slow cooking. Baby gold potatoes are another great option.

Liquid Aminos

Liquid aminos provide the savory flavor of soy sauce while keeping this recipe gluten-free. If you don't need the recipe to be gluten-free, regular soy sauce works perfectly. Alternatively, Tamari and Coconut Aminos work perfect as well.

Honey

Honey balances the garlic and savory flavors while creating a delicious glaze. Maple syrup can also be substituted if preferred.

Garlic

Fresh minced garlic gives this recipe its signature flavor. Jarred minced garlic works well for convenience, but fresh garlic provides the best flavor.

Green Beans

Fresh green beans stay tender-crisp when added during the final part of cooking. Frozen green beans also may work if needed but can water down your sauce as they defrost and cook.

Ingredients

Chicken & Vegetables

  • 2 pounds boneless, skinless chicken breasts (about 4 chicken breasts)

  • 1½ pounds red potatoes, halved

  • 1 (8-ounce) bag fresh green beans

  • Extra virgin olive oil

  • Salt & pepper, to taste

  • Paprika, to taste

  • Mrs. Dash Garlic & Herb Seasoning, to taste

  • Garlic powder, to taste

Honey Garlic Sauce

  • 2 tablespoons extra virgin olive oil

  • 2 tablespoons liquid aminos

  • ¼ cup honey

  • 4 tablespoons minced garlic

  • 2 tablespoons ketchup

  • Salt & black pepper, to taste

Instructions

  1. In a small bowl, whisk together the extra virgin olive oil, liquid aminos, honey, minced garlic, ketchup, salt, and pepper to make the honey garlic sauce. Set aside.

  2. Slice the red potatoes in half and place them in the bottom of the crock pot. Drizzle with a little extra virgin olive oil and season generously with salt, pepper, paprika, and garlic powder. Don't be afraid to season them well.

  3. Place the chicken breasts on top of the potatoes.

  4. Pour the prepared honey garlic sauce evenly over the chicken.

  5. Season the tops of the chicken with salt, pepper, paprika, and Mrs. Dash Garlic & Herb Seasoning. I like to gently rub the seasonings onto the chicken while leaving a nice coating of paprika on top for extra color and flavor.

  6. Cover the crock pot with the lid.

  7. Slow Cook on High for 3½ hours.

  8. After 1 hour, add the green beans to the top of the crock pot. If desired, season them lightly with salt and pepper before replacing the lid.

  9. Continue cooking until the full 3½ hours has elapsed.

  10. Check that the chicken has reached an internal temperature of 165°F, or cut into the thickest portion to ensure there is no pink remaining.

  11. Plate the chicken with the potatoes and green beans, spoon some of the honey garlic sauce over everything, and enjoy!

Notes

  • Don't skip seasoning the potatoes. They rely on that initial seasoning for extra flavor.

  • Fresh green beans provide the best texture, but frozen green beans can be substituted if needed.

  • Leftovers store well in an airtight container in the refrigerator for up to 4 days.

  • This recipe is naturally gluten-free when prepared with gluten-free liquid aminos.

Can I use chicken thighs instead of chicken breasts?

Absolutely! Boneless, skinless chicken thighs are an excellent substitute and stay incredibly juicy in the slow cooker.

Can I substitute soy sauce?

Can I use different potatoes?

Yes! Baby gold potatoes or Yukon Gold potatoes work beautifully in this recipe.
