Crockpot Crispy BBQ Chicken
Description
This Gluten-Free Crispy Crockpot BBQ Chicken is an easy slow cooker dinner made with tender chicken, smoky barbecue sauce, sweet red onion, and bold seasonings. Finished under the broiler for crispy, caramelized edges, this shredded BBQ chicken is packed with flavor and perfect for weeknight meals, meal prep, or easy family dinners.

Ingredients
2 pounds chicken tenderloins
1 cup honey bourbon barbecue sauce (or your favorite gluten-free barbecue sauce)
1 large red onion, sliced
1 can corn, drained
Pinch of liquid smoke
2 tablespoons additional barbecue sauce, for drizzling
Seasonings
Salt, to taste
Black pepper, to taste
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Tabitha Brown Like Sweet, Like Smoky Seasoning
Instructions
Add the chicken tenderloins, sliced red onion, barbecue sauce, liquid smoke, and all seasonings to a crockpot.
Cook on HIGH for 3 to 4 hours, or until the chicken is tender and easily shreds.
Shred the chicken and spread it onto a sheet pan with the drained corn. Drizzle with the additional barbecue sauce.
Broil for 3 to 5 minutes, or until the edges become crispy and caramelized. Serve immediately.
Notes
Any barbecue sauce you love will work beautifully in this recipe. Use your favorite gluten-free barbecue sauce to customize the flavor.
Not a fan of corn? Simply leave it out or substitute your favorite vegetables. Bell peppers, zucchini, green beans, or even roasted sweet potatoes make delicious additions to this crispy BBQ chicken recipe.
If you don't have a barbecue seasoning blend on hand, you can create your own flavor profile by adding a little brown sugar for sweetness, crushed red pepper flakes for heat, or a splash of vinegar for extra tang and depth.
For extra crispy edges, spread the shredded chicken into an even layer on the sheet pan before broiling and avoid overcrowding the pan.
