If you’re looking for an easy, hearty breakfast that practically cooks itself, this Crock Pot Home Fry Breakfast Casserole is the perfect recipe. Loaded with home fries, turkey sausage, eggs, mushrooms, and onions, it’s a filling breakfast that’s perfect for meal prep, holiday mornings, brunch, or even breakfast-for-dinner.
One of my favorite things about this recipe is that everything cooks together in one slow cooker. There’s very little hands-on work, almost no cleanup, and it feeds a crowd with ease. Whether you’re serving family for a weekend brunch or making breakfast ahead for the week, this casserole is always a winner.

Ingredient Breakdown
Frozen Home Fries
Frozen home fries make this recipe incredibly easy while providing the hearty base of the casserole. Since they’re already partially cooked, they hold their texture well during slow cooking without becoming mushy.
Turkey Sausage
I use 1½ pounds of turkey sausage because it’s a leaner option that still adds plenty of protein and flavor. If you prefer traditional pork breakfast sausage, that works just as well.
Eggs
Fourteen large eggs are what hold this casserole together while creating a fluffy, satisfying texture. This recipe is written using large eggs so you may need to add more time for extra large eggs or less time for smaller eggs.
Almond Milk
Almond milk keeps this casserole dairy-free while adding just enough moisture to create a soft, fluffy egg mixture. If dairy isn’t a concern, regular milk works perfectly too.
Mushrooms
This recipe can be customized using any veggies you choose. Some, however, have more water content than others. If using mushrooms, sautéing the mushrooms before adding them to the crock pot removes excess moisture and develops a deeper, richer flavor.
Yellow Onion
Raw yellow onion softens beautifully as it cooks and adds just the right amount of sweetness to balance the savory sausage.
Ingredients
24 ounces frozen home fries
1½ pounds sliced turkey sausage
14 large eggs
½ cup almond milk
1 cup sautéed mushrooms
1 diced yellow onion
Dry Seasonings, to taste
Salt
Pepper
Garlic powder
Dry mustard
Optional
Shredded cheese, for topping
Instructions
Lightly spray the inside of your crock pot with nonstick cooking spray.
Spread the frozen home fries into the bottom of the crock pot in an even layer.
Layer the sliced turkey sausage evenly over the home fries. (Pork breakfast sausage works just as well if you prefer.)
Evenly layer the sautéed mushrooms and diced yellow onion over the sausage.
In a large mixing bowl, whisk together the eggs, almond milk, salt, pepper, garlic powder, and dry mustard until everything is fully combined.
Pour the egg mixture evenly over all of the layers in the crock pot.
If using cheese, sprinkle it evenly over the top now.
Before cooking, make sure all of the ingredients are at least covered by the egg mixture. This is an easy way to know you have enough egg for the casserole to cook evenly.
Cover and cook on High for approximately 5 hours, or until the eggs are fully set in the center.
Scoop into bowls or onto plates and enjoy!

Cook Time Depends on the Size of Your Batch
The cook time listed for this recipe is based on the full recipe as written. If you’re making a smaller batch or cutting the recipe in half, your casserole will likely finish cooking sooner. Start checking for doneness a little earlier to avoid overcooking the eggs.
Make Sure Everything Is Covered
Before putting the lid on, make sure all of the ingredients are at least mostly covered by the egg mixture. That’s the easiest way to know you have enough egg for the casserole to cook evenly and hold together once it’s served.
Sauté the Mushrooms First
Taking a few extra minutes to sauté the mushrooms before adding them to the crock pot removes excess moisture and gives them a richer flavor, helping prevent the casserole from becoming watery. Another "watery" veggie is tomatoes. If you choose to use tomatoes, remove the pulp when dicing.
Notes
Turkey sausage keeps this recipe a little lighter, but pork breakfast sausage works perfectly if that’s what you prefer.
Cheese is completely optional. This casserole is delicious as written, but adding your favorite shredded cheese creates an extra cheesy finish.
