Ingredients
20 ounces frozen hash browns
8 large eggs
1 cup unsweetened almond milk
8 ounces sliced mushrooms
2 cups shredded cheese (dairy-free if needed)
5 ounces fresh spinach
8 ounces deli turkey, chopped

Instructions
Preheat the oven to 350°F.
Par-bake the hash browns. Spread the frozen hash browns evenly onto a baking sheet. Season lightly with salt and pepper and bake for 20 minutes.
Prepare the vegetables. Sauté the mushrooms until softened and any excess moisture has evaporated. If using other vegetables such as bell peppers, onions, tomatoes, or broccoli, cook them until tender before adding them to the casserole.
Create the hash brown crust. Remove the hash browns from the oven and transfer them to an 8×8-inch casserole dish. Stir in half of the shredded cheese, then press the mixture firmly into the bottom of the dish to form a crust.
Prepare the egg mixture. In a large mixing bowl, whisk together the eggs, almond milk, salt, pepper, and dry mustard. Stir in your veggie add-ins.
Assemble the casserole. Pour the egg mixture over the hash brown crust.
