Ingredients
1 cup Medjool dates, pitted
1 cup raw cashews
1 cup unsweetened shredded coconut, divided
2 limes, zested and juiced
¼ cup sunflower seeds
Instructions
Add ½ cup shredded coconut to a food processor and process until finely chopped. Remove and set aside.
Add the remaining ingredients to the food processor: 1 cup Medjool dates, 1 cup cashews, the remaining ½ cup shredded coconut, the zest and juice of 2 limes, and ¼ cup sunflower seeds.
Process until a slightly crumbly dough forms that easily sticks together when pressed.
Roll the mixture into bite-sized balls.
Roll each ball in the finely chopped coconut, then gently roll them once more between your hands so the coating sticks.
Chill for at least 30 minutes, then serve and enjoy.
Notes
Date tip: If you're using Deglet dates, soak them in warm water for 5 to 10 minutes, then drain well before using. Medjool dates are naturally softer and usually don't need to be soaked.
Make it your own: The cashews can easily be substituted with walnuts for a slightly earthier flavor. If you have a nut allergy, you can replace the cashews with additional sunflower seeds or another seed of your choice. Don't be afraid to experiment and have fun with different combinations.
Store in an airtight container in the refrigerator for up to 1 week.
Freeze for up to 3 months for an easy grab-and-go snack.
For an even stronger key lime pie flavor, add a tiny splash of vanilla extract.
