Main Ingredients
1 (5-ounce) box vanilla instant pudding mix
1 (1-ounce) box cheesecake instant pudding mix
2¾ cups cold almond milk (or milk of your choice)
8 to 10 ounces Truwhip Vegan Whipped Topping (or Cool Whip)
1 package Schär Gluten-Free Ladyfingers (regular ladyfingers may also be used)
1 pint strawberries, sliced
1 pint blueberries
Instructions
In a large mixing bowl, whisk together the cold almond milk and both instant pudding mixes until completely smooth.
Refrigerate the pudding mixture for 5 minutes to allow it to begin setting.
Meanwhile, arrange a layer of Schär Gluten-Free Ladyfingers in the bottom of an 8×8-inch baking dish. Slice the strawberries while the pudding chills.
Remove the pudding mixture from the refrigerator and gently fold in the Truwhip Vegan Whipped Topping (or Cool Whip) until fully incorporated. This becomes your custard mixture.
Spread half of the custard mixture evenly over the ladyfingers, making sure it reaches all the way to the edges and the surface is smooth.
Top with half of the sliced strawberries and half of the blueberries.
Add a second layer of ladyfingers.
Spread the remaining custard mixture evenly over the second layer of ladyfingers.
Finish by topping with the remaining sliced strawberries and blueberries.
Cover and refrigerate for 6 to 8 hours, or overnight, until completely chilled and set.
Slice, serve, and enjoy!
Notes
Overnight chilling gives the ladyfingers the best texture.
Regular Cool Whip and traditional ladyfingers work perfectly if you don't need the recipe to be dairy-free or gluten-free.
Feel free to decorate the top with extra strawberries and blueberries before serving.
