Using Goodie Girl Gluten-Free Thin Mint cookies keeps them gluten-free, but regular Thin Mints work just as beautifully if that’s what you’ve got on hand. They’re quick to make, dangerously easy to slice, and built for bake sales, holidays, or late-night “just one square” situations that never stay one square.

Rice Krispies Cereal

Ingredients
Main Ingredients
4 tablespoons dairy-free butter (or regular butter)
10 ounces mini marshmallows (or regular marshmallows, quartered)
12–15 Thin Mint cookies, crushed (Goodie Girl gluten-free or regular)
½ teaspoon peppermint extract
4 cups Rice Krispies cereal
10 ounces chocolate chips (dairy-free or regular)
Instructions
Line an 8Ă—8-inch baking dish with parchment paper or lightly grease it.
In a large saucepan over medium-low heat, melt butter and marshmallows together.
When marshmallows are almost fully melted, stir in peppermint extract. Start light. It intensifies quickly.
Stir until smooth and fully combined, keeping heat low to avoid scorching.
Fold in Rice Krispies cereal and crushed Thin Mint cookies until evenly coated. The mixture will be sticky and thick.
Press mixture into the prepared pan in an even layer.
Let cool at room temperature for at least 1 hour. Do not refrigerate at this stage.
Melt chocolate chips until smooth.
Spread melted chocolate evenly over the cooled bars.
Let chocolate set at room temperature, or refrigerate briefly if you want a faster set.
Slice into 9 squares and serve.
Notes
Peppermint extract is strong. A little goes a long way.
Mini marshmallows melt faster, but quartered regular marshmallows work just fine.
Cooling at room temperature keeps the texture soft and chewy.
Refrigeration is best saved for after the chocolate topping is added.
Store in an airtight container at room temperature for up to 4 days.
